Artichoke Dip – the travel potluck dish

Have you flown thousands of miles for the holidays and unwittingly still found yourself signed up to bring a dish for the family potluck? Have all the gifts been arranged and wrapped by your helpful partner (or recent Past Self) , patiently helping you bear the crush of expectation to somehow visit 50+ people in the span of a few days? Do you still feel that inexplicable competitive urge to “win” the potluck?
Well my friends, I’ve got the recipe for you. Here’s my fallback, which has only 4 critical ingredients, 1 bonus, and the real secret ingredient is finding out when the store near where you’re staying is open on Christmas Eve day, Christmas Day, or whatever other  holiday you are celebrating.

Lots of other people tend to have some of these things lying around their house already, I try not to use too many canned products in my cooking, but I do keep canned artichokes around so I can make this on short notice.

This was originally from my friend Gihani back in 2007 when I live in DC, she got it from her husband who got it from his mom. I’ve refined it only a little, because the base was just so solid.

Ingredients
1 cup mayo (I trying mayo with olive oil today, but hopefully the smoke point of olive oil won’t mess it up)
1 cup sour cream
1 cup Parmesan,, shredded
15 oz. can artichokes hearts, drained and chopped. (or marinated artichokes)

Renee’s Grandma’s Sugar Cookies (a.k.a. Ardene Hindman’s)

Cookies Part 2 of 4.
Happy Thanksgiving to any fellow American friends out there! Maybe with the long weekend, you’ll want to try a cookie recipe?

Renee’s Grandma’s Sugar Cookies (a.k.a. Ardene Hindman)
Makes: ummmm, a whole bunch of cookies. I lost count, and I only did a half portion from what’s prescribed below.
Total Time: 60 minutes+, due to cooling time

Ingredients & Directions, per Renee:
“Cream 2 c sugar and 1 c butter.
Add 3 eggs, 1 c sour cream, 1 t salt, 2 t baking powder, 1 t lemon extract, 6 c flour.
Chill for 1-2 hours
Bake at 375 for 8 min (I do these thinly rolled with cookie cutter shapes)

+After cooling, this is the frosting, which, how my great grandma did it, went on the flat side (or what you’d think of as the back):

4 oz cream cheese
2 1/3 c powdered sugar
4 T butter
1 1/2 t vanilla

Soften cream cheese and butter in the microwave, add sugar and vanilla.
Then, of course, pretty sprinkles…”

Note: I found I bought the wrong lemon vial, so I used a combo of equal parts lemon flavor, rum, and lemon rind.

Okay, I confess, I only did the mixing and refrigerating (one batch with regular all purpose flour, the other with pamela’s gluten-free), my gluten-free friend did a lot of the rolling out, and chocolate friend did the frosting (more on chocolate friend in the 4th post). Thanks to Renee for her grandma’s recipe, and kudos to her grandma, who raised the woman who raised the woman I have been good friends with since college, who has always had a sage word in difficult times, and kept me in my sense of humor. I am familiar with sugar, and I’m familiar with cookies, but never any with sour and cream cheese..
Likelihood of Repeat: 65%
I definitely think this is worth trying again. More recent discussion with Renee has revealed that her mom only puts a thin layer of frosting on, which may explain the reviews from friends who said, “wow. that’s really sweet, I think I know some one who would like that..” Cookies pictured above were the gluten-free ones, which ended up with chocolate drizzles after we ran out of frosting. I am curious if it might be easier to roll out with more refrigeration after mixing so you can use cookie cutters, or if it’s just meant to be rolled into balls and flattened, definitely worth trying again to find out.

Tzatziki Sauce

(November Week 1 Trial)

In anticipation of potential consumers of my meal output going down by 50% this week, I went for a minor trial this time: tzatziki sauce. I found one from The Man Fuel Blog that at least mentioned the risk of heartburn, so I went with that, at half portion.

Ingredients:
1 tsp garlic (went with pre-cut stuff from the jar to get something milder than fresh raw garlic)
1 cup greek yogurt
1 Tbsp sour cream
1/4 tsp dried mint
salt to taste
1/2 c finely diced cucumber (peeled first)

Didn’t take much mixing (for specifics, see the instructions linked above), and I just let this sit for about 30 minutes:

Bam! Tzatziki!

Thanks to my helpful co-chef, got some falafel (prepped “fresh from the box”) fried up with tomato, lettuce, cukes, and roasted butternut squash and potato to overload atop some pita bread for a tasty but vegetarian dinner, and lunch the next day!

Felt really good to have this for lunch. It was delicious, kept well, but didn’t feel over-filling. I really like the novelty of home made tzatziki sauce, since it is so simple to make, but I’m still wishing I could find a delicious yet non-raw-garlic version. You got anything?
